A grease trap (or interceptor) catches fats, oils, and grease before they leave your kitchen for the city sewer. Dallas requires it pumped by a licensed hauler at least every 90 days — and "pumped" means the whole thing, not a skim.

Why "licensed hauler" matters
Dallas City Code §19-126.2(c) is specific: pump-outs must be performed by a licensed hauler, at minimum every 90 days, with 100% of contents removed and manifests kept for 3 years. An unlicensed "cleaning" doesn't count — and won't protect you in an inspection.
Kitchen manager tip: if your trap fills up well before 90 days, your cleaning interval is too long for your volume — not a trap problem. We size schedules to your actual FOG output.
